RM Seafood Restaurant
RM Seafood Restaurant opened on Valentine’s Day in 2005 and has since set a new higher standard for seafood in Las Vegas. The restaurant can be found in the Mandalay Bay Hotel upstairs dining room with a yacht-club atmosphere and draws in a large number of high rollers as well as locals. Unique touches like portholes with tanks of live fish add to the atmosphere here.
Beverage director Jeff Eichelberger is intent on maintaining the globe's bounty, offering organic, biodynamic wines. Desserts at the RM Seafood Restaurant take advantage of fresh fruit in tarts and ice cream.
